Ingredients
- 1 pound rotini pasta
- 1 pound ground beef
- 1 onion, diced
- 4 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (28 ounces) crushed tomatoes
- 1 bay leaf
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
- Add the onion, garlic, carrot, and celery and continue cooking until the vegetables are soft, about 5-7 minutes.
- Add the crushed tomatoes and bay leaf and season with salt and pepper to taste. Simmer for 20-30 minutes until the sauce has thickened.
- Serve the Bolognese sauce over the cooked rotini pasta and enjoy!

Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the sliced onion, red bell pepper, zucchini, eggplant, and minced garlic.
- Add the olive oil, dried oregano, dried thyme, salt, and pepper and toss to coat the vegetables evenly.
- Spread the vegetables in a single layer on the prepared baking sheet and roast for 25-30 minutes, stirring occasionally, until they are tender and browned.
- While the vegetables are roasting, bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- Puree the roasted vegetables in a blender or food processor until smooth.
- Serve the roasted veggie sauce over the cooked rotini pasta and enjoy!
