Summer is almost here and that means it's time for backyard barbecues and picnics! One of my all-time favorite dishes to bring to these gatherings is a delicious tortellini pasta salad.
Tortellini Pasta Salad
This mouth-watering dish is perfect for those hot summer days when you want to eat something refreshing yet satisfying. Plus, it's super easy to make and will be sure to impress your friends and family!
Ingredients:
- 1 pound cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup mini mozzarella balls, halved
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh basil
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- Cook the tortellini according to the package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, mozzarella balls, red onion, and chopped basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and minced garlic. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss to combine. Serve immediately or cover and refrigerate until ready to serve.
Creamy Tortellini Pasta Salad
