Spicy Sausage Pasta with Rapini
Ingredients:
- 8 oz. spaghetti
- 1 lb. spicy Italian sausage, casings removed
- 1 bunch rapini, leaves and stems separated
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste

- Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, according to package instructions. Reserve 1 cup of pasta water, then drain the spaghetti.
- In a large skillet, cook the sausage over medium heat until browned and fully cooked, about 6-8 minutes. Remove sausage from skillet and set aside.

- Add the onion to the skillet and sauté until caramelized, about 10 minutes. Remove onion from skillet and set aside.

- Spread the sausage, onion, and rapini mixture over the puff pastry, leaving a 1 inch border around the edge.
- Brush the edges with beaten egg. Season with salt and pepper.
- Bake for 20-25 minutes, or until the pastry is golden brown and puffed up.
