Cold Chicken Pasta Salad Recipe
Ingredients
- 1 pound rotini pasta
- 2 cups cooked chicken breast, diced
- 2 cups cherry tomatoes, halved
- 1 small red onion, diced
- 1 bell pepper, diced
- 1/2 cup sliced black olives
- 1/2 cup crumbled feta cheese
- 1/3 cup olive oil
- 1/3 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and rinse the pasta under cold water.
- In a large bowl, combine the cooked pasta, chicken, cherry tomatoes, red onion, bell pepper, black olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss well to coat.
- Cover and refrigerate for at least 1 hour before serving. Enjoy!
