Easy Pesto Chicken Pasta for Two With Oven Roasted Tomatoes
First up, we have this delicious pesto chicken pasta with oven roasted tomatoes. It's the perfect meal for a cozy night in with your significant other, or for when you're just too lazy to make a big dinner.
Ingredients:
- 1/2 pound linguine pasta
- 2 boneless skinless chicken breasts, cut into bite-size pieces
- 2 tablespoons olive oil, divided
- 1/4 cup pesto
- 2 tablespoons grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
- salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (205°C).
- Cook the pasta according to the package instructions until it's al dente.
- In a large skillet, heat up 1 tablespoon of olive oil over medium-high heat. Add in the chicken and cook until it's browned on all sides and completely cooked through. Remove the chicken from the skillet and set aside.
- Add the other tablespoon of olive oil to the skillet and add in the halved cherry tomatoes. Season with salt and pepper and put the skillet in the preheated oven for 10-12 minutes.
- When the tomatoes are done, remove the skillet from the oven and add in the cooked pasta, chicken, pesto, and Parmesan cheese. Toss everything together until it's evenly coated with the pesto sauce.
- Divide the pasta onto two plates and enjoy!
Easy Chicken Spaghetti - on the Stovetop or CrockPot!
Next up, we have this deliciously easy chicken spaghetti that can be made on the stovetop or in a crockpot. It's perfect for those nights when you want something comforting and filling.
Ingredients:
- 1 pound boneless skinless chicken breasts, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (10 3/4 ounces) condensed cream of mushroom soup
- 1 can (10 3/4 ounces) condensed cream of chicken soup
- 1 can (10 ounces) diced tomatoes with green chilies, drained
- 1 cup water
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces spaghetti, cooked until al dente
- chopped fresh parsley, for garnish
Instructions:
- In a large skillet, heat up the olive oil over medium-high heat. Add in the onion, green pepper, and garlic and cook until they're softened, about 5 minutes.
- Add in the chicken and cook until it's browned on all sides and completely cooked through, about 7-10 minutes.
- In a large bowl, mix together the two condensed soups, diced tomatoes, water, chili powder, garlic powder, salt, and pepper.
- Add the cooked spaghetti and the soup mixture to the skillet with the chicken and vegetables. Stir everything together until it's completely combined.
- If you're using a crockpot, transfer the mixture to the crockpot and cook on low for 3-4 hours.
- If you're cooking on the stovetop, just let everything simmer together for about 10 minutes.
- Garnish with chopped fresh parsley and enjoy!
