What's up fam! Today, I'm sharing with y'all a bomb summer veggie pasta salad recipe. It's perfect for those hot summer days when you don't feel like cooking over a hot stove. Plus, it's vegetarian friendly so everyone can enjoy!
Summer Vegetable Pasta Salad
Ingredients:
- 1 pound rotini pasta
- 1/4 cup red wine vinegar
- 2 tablespoons dijon mustard
- 1/2 cup extra-virgin olive oil
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 1 yellow squash, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
Instructions:
- Cook pasta according to package instructions. Drain and rinse with cold water
- In a small bowl, whisk together vinegar and mustard. Slowly whisk in olive oil until emulsified. Stir in garlic and season with salt and pepper.
- In a large bowl, combine cooked pasta, yellow squash, zucchini, red bell pepper, red onion, parsley, and basil. Pour dressing over pasta and veggies and toss to combine.
- Chill in the refrigerator for at least an hour before serving.
Vegetarian Pasta Salad Recipes

- 1/2 red onion, diced
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
Instructions:
- Cook pasta according to package instructions. Drain and rinse with cold water
- In a small bowl, whisk together balsamic vinegar and honey. Slowly whisk in olive oil until emulsified. Stir in garlic and season with salt and pepper.
- In a large bowl, combine cooked pasta, chickpeas, cherry tomatoes, red onion, parsley, and basil. Pour dressing over pasta and veggies and toss to combine.
- Chill in the refrigerator for at least an hour before serving.
