Caprese Tortellini Pasta Salad
Ingredients:
- 1 pound cheese tortellini
- 1 cup grape or cherry tomatoes, halved
- 1 cup fresh mozzarella cheese balls, halved
- 1/2 cup chopped fresh basil leaves
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions:
- Cook the tortellini according to package instructions. Drain and rinse with cold water until cooled.
- In a large mixing bowl, combine the cooled tortellini, tomatoes, mozzarella, and basil.
- In a separate small mixing bowl, whisk together the balsamic vinegar, olive oil, garlic, salt, and pepper.
- Pour the dressing over the tortellini mixture and toss until well-coated.
- Refrigerate for at least 30 minutes, or until ready to serve.
