Italian Antipasto Pasta Salad
Ingredients:
- 1 pound fusilli pasta
- 1/4 cup red wine vinegar
- 1/2 cup extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces fresh mozzarella cheese, diced
- 6 ounces salami, sliced thin and cut into strips
- 6 ounces pepperoni, sliced thin and cut into strips
- 1/2 cup chopped fresh basil leaves
- 1/2 cup sliced kalamata olives
- 1/2 cup sliced mixed pepperoncini
Instructions:
- Bring a large pot of salted water to a boil. Add the fusilli pasta and cook until al dente. Drain and rinse under cold water.
- In a large bowl, whisk together red wine vinegar, extra-virgin olive oil, Dijon mustard, salt, and black pepper.
- Add cooked pasta, fresh mozzarella cheese, salami, pepperoni, chopped fresh basil leaves, kalamata olives, and mixed pepperoncini to the bowl and toss to combine.
