Ingredients:
  • Pasta - 1 pound (any shape)
  • Butter - 2 tbsp
  • All-purpose flour - 2 tbsp
  • Milk - 1 cup
  • Heavy cream - 1/4 cup
  • Shredded cheddar cheese - 1/2 cup
  • Cauliflower florets - 1 cup
  • Broccoli florets - 1 cup
  • Carrot - 1 (sliced)
  • Red onion - 1 (sliced)
  • Garlic - 1 clove (minced)
  • Olive oil - 2 tbsp
  • Italian seasoning - 1 tsp
  • Crushed red pepper flakes - 1/2 tsp
  • Salt and pepper - to taste
Instructions:
  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Add flour and whisk until bubbly.
  3. Gradually add in milk, heavy cream, and shredded cheese. Stir until cheese is melted and sauce is smooth.
  4. In a separate pan, sauté cauliflower, broccoli, carrot, red onion, and garlic in olive oil over medium heat for 5-7 minutes.
  5. Add Italian seasoning, crushed red pepper flakes, salt, and pepper to the vegetables and stir to combine.
  6. Add cooked pasta to the vegetable mixture and pour the cheese sauce over everything. Stir until well combined.

  4. Spread vegetables in a single layer on a large baking sheet. Roast in the oven for 25-30 minutes, stirring occasionally, until vegetables are tender and lightly browned.
