Ingredients:

Pasta - 1 pound (any shape)
Butter - 2 tbsp
All-purpose flour - 2 tbsp
Milk - 1 cup
Heavy cream - 1/4 cup
Shredded cheddar cheese - 1/2 cup
Cauliflower florets - 1 cup
Broccoli florets - 1 cup
Carrot - 1 (sliced)
Red onion - 1 (sliced)
Garlic - 1 clove (minced)
Olive oil - 2 tbsp
Italian seasoning - 1 tsp
Crushed red pepper flakes - 1/2 tsp
Salt and pepper - to taste

Instructions:

Cook pasta according to package instructions. Drain and set aside.
In a saucepan, melt butter over medium heat. Add flour and whisk until bubbly.
Gradually add in milk, heavy cream, and shredded cheese. Stir until cheese is melted and sauce is smooth.
In a separate pan, sauté cauliflower, broccoli, carrot, red onion, and garlic in olive oil over medium heat for 5-7 minutes.
