Vegetarian Pasta Salad
Ingredients:
- 1 pound pasta (we recommend fusilli or rotini)
- 2 red bell peppers, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 pint cherry tomatoes, halved
- 1/2 cup pitted kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh oregano
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp. honey
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
- In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large bowl, combine the cooked pasta, diced red and yellow bell peppers, red onion, cherry tomatoes, kalamata olives, crumbled feta cheese, and chopped parsley, basil, and oregano.
- In a small bowl, whisk together the olive oil, red wine vinegar, honey, minced garlic, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.
- Cover and refrigerate for at least 30 minutes before serving to let the flavors meld together.
